Goat Cheese Croquettes

Ingredients

  • Woolwich Dairy Original Soft Fresh Goat Cheese log
  • Egg
  • Panko bread crumbs
  • Olive oil
  • Rosemary, to taste
  • Smoked paprika, to taste
  • Garlic powder, to taste
  • Salt and pepper, to taste

Directions

  1. Remove a cold Woolwich Dairy Original Soft Fresh Goat Cheese log from its packaging. It’s important to work with cold cheese, so it’s firmer and holds its shape. Slice the goat cheese log into ½” rounds, and place in the freezer for 10 minutes to firm the cheese up.
  2. While the cheese is cooling, mix bread crumbs and seasoning in a large mixing bowl. In a separate mixing bowl, beat egg.
  3. Heat olive oil in a large flat skillet. While oil heats, removeth e goat cheese rounds from the freezer. Dunk each goat cheese round, one at a time, in the beaten egg, followed by the seasoned panko mixture. Fry in the warmed skillet for 3-5 minutes, turning once halfway through, when breading has browned.
  4. Allow croquettes to cool on paper towel, to remove excess oil. Serve on their own, atop a salad or alternating between tomato slices and basil.
