Figs & Flowers Goat Cheese Salad

Ingredients

  • 113g Woolwich Dairy Original Soft Fresh Goat Cheese log
  • 4 cups microgreens
  • 6 beets, raw, peeled and thinly sliced
  • 6 figs, quartered
  • 1 pomegranate, seeds removed
  • edible flowers

Pommies Cider Vinaigrette

  • 2 tbsp Pommies Dry Cider
  • 2 tbsp apple cider vinegar
  • 6 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Directions

  1. Assemble microgreens evenly into 4 separate bowls. Evenly distribute beets and figs.
  2. Hand crumble Woolwich Dairy Original Soft Fresh Goat Cheese log on top. Sprinkle with pomegranate seeds and edible flowers.
  3. For the vinaigrette, pour the Pommies Dry Cider and vinegar into a small bowl. Add the salt and black pepper, to taste. Stir until the salt dissolves then add olive oil. Serve on top of microgreens salad.
