Minty quesadillas with avocado and Goat cheese

Ingredients

  • 4 tortillas (9 in.)
  • 2 (113 g) Woolwich Dairy lemon and lime goat cheese logs
  • 2 cooked chicken breasts (preferably grilled), cut into strips
  • 2 avocados, sliced
  • A pinch of Mexican chili powder (optional)
  • Approximately 60 ml (1/4 cup) fresh mint leaves
  • Canola oil, as needed

Directions

  1. On a clean work surface, coat the 4 tortillas with Woolwich Dairy lemon and lime goat cheese. Garnish the tortillas with the chicken and avocado slices.
  2. Sprinkle some chili powder over top and garnish with a few mint leaves, then fold the tortillas shut.
  3. In a pan set over medium-low heat, cook the quesadillas, two at a time in a drizzle of canola oil, 2 to 3 minutes each side. Serve.
