Ingredients
- 1 zucchini, grated
- 250 ml (1 cup) all-purpose flour
- 5 ml (1 tsp.) baking powder
- A pinch of salt
- 1 egg, whisked
- 250 ml (1 cup) milk
- 30 ml (2 tbsp.) melted butter
- 30 ml (2 tbsp.) fresh dill, chopped
- 1 container (175 g) Woolwich Dairy Feta cheese
- 4 poached eggs
- Dill, peas, and blanched zucchini slices, for garnish
Directions
- Preheat your waffle maker.
- In a bowl, combine flour, baking powder, and salt. Add the egg and milk. Whisk until mixture is smooth. Add the melted butter, dill, and half of the Feta cheese. Stir.
- Cook the batter in the waffle maker, one batch at a time. Garnish the waffles with the poached eggs, remaining Feta cheese, fresh dill, peas, and zucchini slices, if desired. Serve.
