Zucchini waffles with poached eggs and goat cheese

Ingredients

  • 1 zucchini, grated
  • 250 ml (1 cup) all-purpose flour
  • 5 ml (1 tsp.) baking powder
  • A pinch of salt
  • 1 egg, whisked
  • 250 ml (1 cup) milk
  • 30 ml (2 tbsp.) melted butter
  • 30 ml (2 tbsp.) fresh dill, chopped
  • 1 container (175 g) Woolwich Dairy Feta cheese
  • 4 poached eggs
  • Dill, peas, and blanched zucchini slices, for garnish  

Directions

  1. Preheat your waffle maker.
  2. In a bowl, combine flour, baking powder, and salt. Add the egg and milk. Whisk until mixture is smooth. Add the melted butter, dill, and half of the Feta cheese. Stir.
  3. Cook the batter in the waffle maker, one batch at a time. Garnish the waffles with the poached eggs, remaining Feta cheese, fresh dill, peas, and zucchini slices, if desired. Serve.
