2 tbsp Woolwich Dairy Original Soft Fresh Goat Cheese
2 tbsp Woolwich Dairy Original Soft Fresh Goat Cheese Crumbles, to garnish
¼ cup olive oil 1 tbsp white balsamic vinegar
1 tsp Dijon mustard 1 clove garlic, minced
1/2 tsp sea salt Ground black pepper
1 English cucumber, cut lengthwise into fine strips
1/2 cup flat-leaf parsley
1/2 cup fresh tarragon
¼ cup fresh dill
1/2 cup purple basil
1/2 cup fresh mint
1 green onion, minced
1/2 cup fresh blueberries
Combine olive oil, white balsamic vinegar, Woolwich Dairy Original Soft Fresh Goat Cheese, Dijon mustard, garlic, salt and ground black pepper in a blender. Blend until fully combined. Refrigerate until ready to use.
In a large bowl, add cucumber strips, parsley, tarragon, dill, purple basil, mint, green onion and blueberries. Pour vinaigrette over salad and toss delicately. Season with salt and pepper to taste.
Transfer onto a serving dish. Garnish with Woolwich Dairy Original Soft Fresh Goat Cheese Crumbles. Serve immediately.
