Ingredients
- 113 g Woolwich Dairy Original Soft Fresh Goat Cheese log
- 4 cups vegetable broth
- 1 large sweet potato, roughly chopped
- 1 carrot, roughly chopped
- 1 apple, cored and diced
- 1 onion, diced
- 2 tbsp extra virgin olive oil
- 2 tsp Sriracha, or to taste
- 2 tsp lime juice
- salt, to taste
Lime Goat Cheese Swirl
- 113 g Woolwich Dairy Original Soft Fresh Goat Cheese log
- 2 tbsp lime juice
Garnishes
- Pumpkin seeds, to garnish
- Chipotle powder, to garnish
Directions
- In a large pot, combine all soup ingredients except Woolwich Dairy goat cheese. Bring to a boil, reduce to a simmer, cover and cook until vegetables are tender, about 25 minutes. Remove from heat and stir in goat cheese. Using an immersion blender or in a blender, puree soup until smooth.
- While soup is cooking, make the lime goat cheese swirl by whisking goat cheese with lime juice until fully combined. Transfer to a plastic squeeze bottle or zip top bag (seal and slice tip of zip top bag).
- Ladle into small serving cups or bowls and drizzle with swirl. Garnish with pumpkin seeds and chipotle powder.
