Roasted Red Pepper & Capers Bruschetta

Ingredients

  • Woolwich Dairy CHEVRAI Original Goat Cheese log
  • Red peppers, roasted and diced
  • Red onion, diced
  • Tomatoes, diced
  • Parsley, diced
  • Capers
  • Olive oil
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 350°F.
  2. On a cutting board, slice a fresh baguette into ½” slices. Brush each crostini with olive oil on one side and place on a baking sheet. Bake in the warmed oven for 10-15 minutes, until bread is golden brown.
  3. While the crostinis brown, take Woolwich Dairy CHEVRAI Original Goat Cheese out of the fridge, remove it from its packaging and allow it to temper. This will ensure our signature recipe goat cheese is ultra-soft, smooth and spreadable!
  4. Prepare your bruschetta topping! Dice roasted red peppers, red onion, tomatoes and parsley, then place in a mixing bowl, along with capers. Drizzle lightly with olive oil and a small splash of balsamic glaze. Stir well, adding salt and pepper, to taste.
  5. Remove crostinis from the oven, and spread tempered goat cheese onto each piece. Top with bruschetta mixture and serve immediately.
