Refreshing Grilled Cheese

55 g (1/2 log) Woolwich Dairy CHEVRAI original goat cheese, room temperature

½ green zucchini, finely sliced lengthwise

1 tsp. olive oil

Salt and ground pepper

1 tsp. butter, room temperature

1 ripe fig, torn into 3 pieces

1 tsp. honey

1 basil leaf, coarsely torn into pieces

2 slices sesame seed bread

¼ dehydrated roasted red bell pepper

  1. Preheat BBQ or grill pan on high.
  2. Baste zucchini slices with olive oil and season with salt and pepper. Grill for one minute on each side. Set aside.
  3. Set heat to low.
  4. In a small bowl, combine fig pieces, honey and basil.
  5. Butter each slice of bread. Spread Woolwich Dairy CHEVRAI goat cheese evenly, and add pepper slice, 3 fig pieces and grilled zucchini slices. Top with the second slice of bread, and place on hot grill.
  6. Cook 2 to 3 minutes on each side using a weight as needed to press down on the grilled cheese as it cooks.
