Warm Marinated Goat Cheese

Ingredients

    Garlic Cloves, thinly sliced
  • 2
    Small Bay leaves
  • 1
    Rosemary sprig, leaves removed
  • 1/2 tsp.
    Dried thyme
  • 1 Tbsp
    Black, white, green and pink peppercorns, lightly crushed
  • 1/2 tsp.
    Mustard seeds, lightly crushed
  • 1/2 tsp.
    Fennel seeds, lightly crushed
  • 1/2 cup
    Extra virgin olive oil
  • 140g
    Woolwich Dairy Chevrai goat cheese, sliced into equal parts
  • 1
    French bread, sliced and toasted

Preparation

Mix together the garlic, herbs, peppercorns, mustard and fennel seeds and oil into a small bow.

Place over a medium low heat for about 5 minutes and then set aside for 5 - 10 minutes for the flavours to infuse.

Arrange the goat cheese rounds on a platter and pour over the marinade. Serve warm with the French bread.
