Preheat grill to 425° F (220° C).
Chop vegetables into large pieces and place into a large bowl.
In a separate bowl, combine oil, vinegar, thyme, sea salt and pepper and garlic. Pour over the vegetables and toss until the vegetables are well coated.
Grill the vegetables, making sure to remove while still crisp.
Remove vegetables from the grill and place back in a large bowl. Immediately add the crumbled goat cheese over hot vegetables and toss well.
